Founded by Santa Fe–born Chef Josh Gerwin, the concept began over a decade ago as a food truck and catering operation that helped pioneer New Mexico fusion cooking in the city. What started humbly has grown into an award-winning restaurant, neighborhood butcher shop, and growing national recognition—all while staying deeply rooted in local culture.
Chef Josh draws inspiration from the flavors he grew up with in Santa Fe, honoring traditional New Mexican cooking while pushing it forward with his own creative edge. Each dish is intentionally designed to feel familiar yet unexpected, blending classic techniques with new ideas and vibrant flavors. The philosophy is simple and unapologetic: all original, no covers—food that respects tradition without being confined by it.
